
Ebelskivers “Norwegian pancakes” are like little doughnuts without any fat. It might take you a while to get the name right but I am sure that after trying one it will be difficult for you to put your plate away. Ebelskivers are very similar to Dutch pancakes, customarily filled with fruit mainly with apples but you can use “blueberry, peach, or strawberry” if you like.
Ebelskivers should be filed with fruit while cooking. However, it would be much easier for you if you simply slice them open and fill them with fruit after they are cooked.
A special iron-pan with seven round molds used to make Ebelskivers pancakes can be purchased from cooking stores.
Ingredients
2 Cups of all-purpose flour
1½ Cups of Milk
2 Beaten Eggs
1 Table Spoon Baking Powder
½ Table Spoon Baking Soda
¼ Table Spoon Salt
2 Cups sour Cream
½ Buttermilk or Milk
¼ to ½ Cup Chunk Apple Sauce
~ Butter or canola oil for greasing the pan
~ Jam, maple syrup, and powdered sugar for serving
Preparation
Whisk together the flour, baking soda, baking powder, salt in a bowl. In another medium-bowl lightly beat the egg yolks, sour cream, and milk. Then add the egg mixture into the flour mixture and whisk the mixture by hand or with an electric mixer “as you feel comfortable” until smooth.
Now heat the special Ebelskivers iron-pan maker over medium heat then place a tiny bit of canola or butter in every mold and spread it equally around the molds. Now it is time to fill each mold with a spoonful of mixture prepared before. The mixture will turn light brown or “Gloden brown” within 2 to 3 minutes, turn every pancake gently with a skewer or fork and then do the same with the other side.
Jam, maple syrup, or fruits can be added after transferring the pancakes to a plate.
