Its Halloween season and we have suggested many pumpkin carving ideas on these pages. Don’t consider the seeds as a waste. Pumpkin seeds are much nutritious option than all those bakery products you buy to entertain your guests. Pumpkin seeds are fabulous source of good quality proteins and fiber. Seeds are heart friendly and can be used in recipes much like almonds or other nuts.
Seeds can be processed in a variety of ways and are perfect to serve with steaming coffee or tea. I would show the basic idea to process the seeds than it’s up to your creativity to use them in preparing dishes for family members and guests.
The basic recipe to roast the seeds is as following:
- Wash the seeds, immediately after extraction, even if you intend to cook them at later time. This to protect the pulp from becoming dry.
- Spread the seeds on a baking sheet or frying pan taking care that each seed should touch the surface of the pan. Sprinkle oil on the seeds.
- Bake at 300~330 F for 25~30 minutes, stirring the seeds at regular intervals.
You can sprinkle a dash of salt to add flavor. However take care in case somebody in the family has high blood pressure as the sodium would not be conducive to the condition.
To prepare sweet seeds, roast the seeds as above and add sugar in the oil in a separate bowl and heat it for a minute or two over medium flame. As the sugar melts add seeds to the bowl and cook till the seeds are coated.
