So the Jack O’ lanterns are ready to go with the celebrations. Think of entertaining your guests and loved ones in a healthier way this Halloween. Fiber, proteins and vitamins rich pumpkin seeds taste as much great as all those cookies and candies you would buy. As you empty the pumpkin and take the flesh out don’t throw the seeds away, there are lots of ways to process the seeds to match the varied tastes of family members. The seeds can be sweetened or salted and fabulous idea to serve with steaming hot tea or coffee. Here are the simple steps to prepare the seeds:
Wash the seeds and separate the flesh and pulp from the seeds. To avoid difficulty wash the seeds as soon as you scoop out the pulp.
Dry the seeds in open air.
Spread the seeds on a baking sheet.
Take care to spread the seeds in one layer
Brush the antioxidants rich olive oil or better still virgin olive oil or you can use peanut oil.
Bake at about 300 degrees.
The seeds would be ready within 15~25 minutes.
Occasionally pull out the tray to check the seeds.
You can sprinkle salt to add taste. I particularly like sprinkling ginger powder also as it goes great with taste and safeguards against all those winter diseases like flu etc.
The seeds can safely be stored in an air tight jar for later usage.
